Apricot Nectar Cake

 My mother would make this cake when family would come to town.  It has mostly a lemon flavor, very moist and oh so good.  It is better served at room temp and not warm. I hope you enjoy this cake as much as we do....

Super easy and a great crowd pleaser...
Cake
1 package Duncan Hines yellow cake mix
1 small box lemon jello
3/4 c oil
3/4 c apricot nectar drink (in a can)
4 eggs
1 t vanilla
1 t lemon extract
Mix all ingredients well and bake in a greased and floured tube pan at 350 degrees for 45 min or until cake is done. Remove from pan and punch holes in cake with ice pick. Pour following glaze over cake.
Glaze
1/4 c lemon juice (I use fresh squeezed)
2 T apricot nectar
2 c powdered sugar
Mix well, and pour over warm cake......yum!

Pumpkin Bread
Blend
15oz can pumpkin
3 c sugar
1 c oil
2/3 c water
4 eggs
then add
2 t. soda
1 t. salt
1 t. cinnamon
1 t. nutmeg
1/2 t. ginger
3 1/2 c flour
mix for about 1 min...until blended
put into a 13x9 greased and floured glass baking dish. Bake at 350 for 60 to 75 min....can be served with whipped cream or you can frost with a cream cheese frosting (homemade of course)....yum!

Well, isn't that the frosting on the cake!

Ok ladies...if you dont like a really sweet frosting this is a must to try....I got this recipe from my sweet mother in law...


White frosting

In a sauce pan add 1 cup milk,1/2 cup flour. Cook until real thick (forms a sticky ball) - Cover and let cool to room temp. In a bowl add 1/2 cup sugar, 1 1/2 sticks of butter at room temp. and 1 tsp. vanilla . Cream together. Add flour mixture. Beat until smooth. About 2 min.
