Farmers Market Frenzy

I love going to farmers markets.....We have many here where I live.   My favorite one is in our old village on Saturdays....they have live music, fruit and veggies aplenty and lots of great homemade foods and kettle corn...and plenty of organic to choose from.  I encourage you to support your local farmers markets if you have any....

April, a time to send your love via snail mail

April is national letter writing month....So I have been making postcards on my favorite site..."Polyvore"  I have met many wonderful ladies from all around the world on this site....It's a place to relax and let your imagine go to work.....here are a few of my postcards I have been mailing to some of my friends....Have you wrote to your loved ones lately?  Maybe a lonely mother or grandmother? Fresh Apple Cake

Hi Ladies, Our church has a bake auction once a year and this cake I make always gets one of the highest bids...$85.00 to $100.00.....I have never had one apple loving person to not like this delicious mouth watering cake. It's moist with a creamy topping. I gave my friend this recipe and her family went crazy over it...so she always makes a few extra in the fall and freezes them, that way they are already made for when company comes.....I hope you like it as much as we do....♥
Fresh Apple Cake

1 1/2 c oil
2 c sugar
2 t vanilla
1 t salt
1 t ground cloves
3 eggs
1 t soda
1 t cinnamon
3 c flour
3 c chopped and peeled apples
1/2 c crushed walnuts (optional)

Combine the first 8 ingredients. Add flour. Add apples and walnuts. Bake in a greased and floured bundt pan at 350 degrees for 1 1/2 hours or until done.

Topping
1/2 c butter
1/2 c brown sugar
2 T milk
Cook in a small sauce pan until a boil. Pour over warm cake....cool 1 hour before serving

Apricot Nectar Cake

 My mother would make this cake when family would come to town.  It has mostly a lemon flavor, very moist and oh so good.  It is better served at room temp and not warm. I hope you enjoy this cake as much as we do....

Super easy and a great crowd pleaser...
Cake
1 package Duncan Hines yellow cake mix
1 small box lemon jello
3/4 c oil
3/4 c apricot nectar drink (in a can)
4 eggs
1 t vanilla
1 t lemon extract
Mix all ingredients well and bake in a greased and floured tube pan at 350 degrees for 45 min or until cake is done. Remove from pan and punch holes in cake with ice pick. Pour following glaze over cake.
Glaze
1/4 c lemon juice (I use fresh squeezed)
2 T apricot nectar
2 c powdered sugar
Mix well, and pour over warm cake......yum!

Pumpkin Bread
Blend
15oz can pumpkin
3 c sugar
1 c oil
2/3 c water
4 eggs
then add
2 t. soda
1 t. salt
1 t. cinnamon
1 t. nutmeg
1/2 t. ginger
3 1/2 c flour
mix for about 1 min...until blended
put into a 13x9 greased and floured glass baking dish. Bake at 350 for 60 to 75 min....can be served with whipped cream or you can frost with a cream cheese frosting (homemade of course)....yum!

Ok ladies...if you dont like a really sweet frosting this is a must to try....I got this recipe from my sweet mother in law...


White frosting

In a sauce pan add 1 cup milk,1/2 cup flour. Cook until real thick (forms a sticky ball) - Cover and let cool to room temp. In a bowl add 1/2 cup sugar, 1 1/2 sticks of butter at room temp. and 1 tsp. vanilla . Cream together. Add flour mixture. Beat until smooth. About 2 min.
